On behalf of the organising committee, we welcome you to the 27th International Specialized Symposium on Yeasts, coming back to France 25 years after the last French edition in Montpellier. This time, it will happen in Paris, at the Institut Pasteur, and is dedicated to Louis Pasteur. While all scientists working on yeasts know of Pasteur's demonstration of the role of yeast (Saccharomyces cerevisiae) in alcoholic fermentation, fewer may know that he also postulated that different species of yeasts were involved in different types of fermentation.
The aim of this meeting is to present current work on several species of yeasts in the fields of biotechnologies and health. Themes will cover the exploration of biodiversity of these species; exploitation of genomic data and modeling of cellular function; development of new biotechnological processes for the food, chemical and pharmacological industries; use of yeasts as models of human pathologies; and also the study of pathogenic yeasts.
Newest results and the current technological developments in these fields will be presented and discussed. |
